In the western part of the country, the famous coffee region of Azacualpa is known for its high altitudes and specialty coffees. This coffee is sourced by the Agricultural Cooperative Brisas del Pelón Limitada (CABRIPEL), which was founded in 1991 and currently has 58 members, including 7 women. All members are committed to organic farming standards and work on improving the quality of their coffee through innovative techniques and methods. Their aim is to raise the families' income and increase their quality of life. To achieve this, the cooperative supports the values of unity, responsibility, solidarity, and transparency.
We love roasting this organic coffee to a city roast profile (medium roast), specifically for pour-over and drip brew methods. The main flavor notes we consistently taste are toffee, fig, and plum, with a clean, slightly citrus finish.
